Can Maula bakery: Peix de l’Estany (‘Fish’ cake)
Can Maula first opened its doors in Melianta (Fontcoberta) near Banyoles in 2018, but its story begins much earlier, in 1876, when a family ancestor who was a stonemason by profession took advantage of the heat of the ceramic oven to bake bread for his neighbours. This practice gave rise to what would become one of the most renowned bakeries in the area, which has recently expanded to open a new shop in the centre of Banyoles.
Today the bakery is run by Albert, the fourth generation of the family, who remains committed to tradition and quality. His products are all made with natural and local ingredients, and baked in a wood-fired oven. Can Maula’s philosophy is all about offering products that retain their nutritional and organoleptic properties, and this guarantees you a unique and traditional food experience.
The bakery is particularly known for its pastries, including their Peix de l’Estany, or ‘Fish’ cake, a delicious puff pastry creation with apple flakes and a glacé cherry eye, filled with cream, custard or chocolate ganache. And if you can visit them on January 5th, you won’t want miss out on their Tortell republicà (‘Republican Tortell’), a special version of the traditional Tortell de Reis Christmas cream cake. Instead of the king and a crown, this tortell has a fava bean and a traditional Catalan caganer figure, and replaces the crown with a barretina hat.
