Jaume Figueras bakery and patisserie: a tribute to tradition
The Figueras bakery dates back to 1916, became consolidated in Banyoles in 1925, and soon won fame for the excellent quality and flavour of its bread. They subsequently extended their product range to include cakes, Vienna rolls, donuts and, in time, pastries and the first croissants. A real boom in the confectionery business in the 1970s brought tortells (cream cakes), brazos de gitano (Swiss rolls), xuixos (custard donuts), and their famous sweet coca, a Catalan flatbread with burnt custard. In the 1990s, their bunyols (fried dough balls) became widely popular, and from the 2000s the new generation of the Figueras family modernised the business with breads of different origins and more traditional products, such as the classic ring-shaped Tortell cream cakes and Mones de Pasqua (Easter cakes), while also opening a cafe area.
In recent years, head of the patisserie Jaume Figueras has undertaken in-depth gastronomic research to revive a number of traditional Banyoles recipes. One of his more remarkable achievements is the re-creation of the classic Cansalada de la Puda, a sweet with a long history. This delicacy – which could be translated as La Puda ‘Bacon’ – became popular among the bourgeoisie of the time, and was typically eaten after drinking the sulphurous water of the Pudosa spring, to neutralise the intense rotten-egg taste of the water.
Don’t miss the chance to try this Banyoles classic, shaped like a piece of fatty bacon (hence the name), which combines the lightness of sponge cake with a delicate meringue icing and a subtle hint of lemon and vanilla.
