Can Japet bakery: Cargol de Banyoles

Can Japet is a baking legend in Banyoles. It was founded by a couple in Castellfollit de la Roca in 1890, but with widespread poverty there in the post-war period, they moved down to the more prosperous Banyoles. Initially named Can Josep – Joseps were often called Josefets at home – over time it became known as Can Japet, as it is today.
Baking is the heart and soul of the business, where Joan, as the family heir, prepares all the ingredients and kneads the dough with love and dedication. In winter, the old wood-fired oven offers up the delightful aroma of freshly baked bread – round loaves, baguettes, rolls, and so on – made with a variety of flours, including wheat, rice and spelt. As well as selling bread, Can Japet offers a cosy space for breakfast or an afternoon snack, with tables in one of the most beautiful and emblematic squares in Banyoles.
But if Can Japet is known for any one thing, it is their famous Cargol de Banyoles, or Banyoles Snail, a pastry first created by Joan’s grandfather that quickly won over the palate of the townspeople.
The Cargol is a delicious pastry roll in the shape of a snail, made as individual pastries and in large sizes for sharing, and chocolate-filled versions. Its crunchy and slightly toasted base give it a unique flavour and aroma, with a subtle caramelisation that makes it truly scrumptious.
